Slow Oven Roast Chicken

Since I had the oven on today due to my earlier baking moments, decided that dinner would be a simple Slow Oven Roast Chicken. And the result turns out very much better than my previous attempt in roasting chicken

Ingredients :

  1. 4 chicken tights
  2. 3 stalls of celery – cut into big pieces
  3. 2 carrots – cut into big pieces
  4. 2 potatoes – cut into 3 big pieces each
  5. 1 red onions
  6. Rough sea salt
  7. 2 tablespoon of olive oil
  8. Pepper for seasoning
  9. Mix herbs for seasoning
  10. Cherry tomatoes

Sauce : Juice from the roast chicken cook with black pepper sauce (today I use the local black pepper sauce brand, Life)

  
Method :

  1. In the roasting pan, line the chicken nicely and the cut vegetables and onions (not including the tomatoes) surrounding the chicken
  2. Season with pepper and rough salt. Drizzle with 2 tablespoon of olive oil  
  3. In the pre-heated oven, bake for 1 hour at 180c
  4. Then increase the temperature to 200c and roast for another 15 mins
  5. Increase further the temperature to 250c and roast for another 15 mins until the chicken is brown
  6. Remove and serve with tomatoes and the sauce
