Dewy Liver Cake
Ingredients:
800g chicken liver
3 carrots
3 onions
1 cucumber
200g sour cream
150g homemade mayonnaise
1/2 clove of garlic
1 bunch of dill
3 tbs flour
1 tsp salt
3 bay leaves
3 eggs
Method:
1. Firstly, peel carrots and wash them (I took 5 small carrots, 3 medium-sized carrots will be also enough).
2. Grate the carrots (use the large holes of a box grater).
3. Peel and cut an onion.
4. Add a little bit of vegetable oil on your pan and fry the onions and carrots until golden.
5. Turn off the heat, add the bay leaves to the pan and cover it to saturate with species flavor. Leave to cool.
6. Wash your liver and let the drops disappear. Then cut off the striking.
7. Blend the liver. Add the flour, eggs, 2 tbs sour cream and salt. You should get a paste resembling thick pancakes pastry or a lit bit thicker.
8. Heat your pan and add some oil. Pour some of the mixture onto the pan and bake the pancakes (it’s the most complicated process because the edges should be equal).
9. I had 8 pancakes on a pan 22cm in diameter. Leave them cool.
10. Mix sour cream, mayonnaise, cut greens and garlic.
11. Now arrange our pancakes into a cake. Put some dressing of sour cream and mayonnaise onto the 1st liver pancake (about 1/5-2 tbs).
12. The put fried carrots and onions (if there is too much oil, remove it from the vegetables). Then a pancake layer again.
13. Grate the cucumber and put it to the pancake. Repeat until pancakes end.
14. That’s it. Decorate if you wish. Enjoy!
